Yesterday, March 20, was National Ravioli Day. This wonderful holiday falls on the same day each year in order to honor the delight that is ravioli.
Ravioli rivals almost any other dish. In the pasta world, ravioli clearly dominates. This is partly because there is so much variety with ravioli. Typically, ravioli is filled with ricotta; however, the possibilities are limitless. Modern ravioli can have any type of cheese, meat and even vegetables. Spinach ravioli has been growing in popularity recently. Most commonly, Ravioli is made in square shapes, but it can also be made in circles or semi-circles for variety.
